Garlic Pasta

I don’t know about you but sometimes I just crave pasta! Here is a fast and delicious pasta recipe! We paired this with garlic bread but you could also add grilled chicken.

Ingredients

(this recipe serves 4)

• 8 ounce Fettuccine noodles
• 1 tablespoon olive oil
• 2 tablespoons butter
• 2 tablespoons garlic powder
• 2 cups chicken stock
• 1 cup milk
• ½ cup Parmesan cheese
• Salt and pepper to taste

Instructions
1. In a large skillet, heat olive oil
2. Add pasta (uncooked), butter, chicken stock, garlic powder, and milk
3. Stir and bring to a boil
4. Reduce heat to medium-low, cover and simmer for 20 minutes. Stir occasionally
5. Remove from heat and toss pasta
6. Add cheese and stir
7. Enjoy!

Perfect Chili

I’m not usually a chili fan but this recipe is delicious! This is my mom’s recipe that she has used for years. I made it for the first time this weekend and it turned out perfect!

Ingredients:
1 pound ground beef or ground turkey
1 can tomato soup
1 can tomato sauce (8-10 oz.)
1 small can tomato paste
1 can dark red kidney beans
1 can chili/spicy chili beans
1 chopped onion or 1 tablespoon onion powder
Pinch of salt
¼ cup chili powder
1 can water (add more if too thick)

Instructions:
1. Brown the beef/turkey with chopped onion and a sprinkle of salt
2. Drain grease
3. Mix all of the ingredients with the meat in a large pot
4. Cover and simmer on low for around 1 hour

Tip: If you have leftovers, you can freeze this in mason jars! One small mason jar = one bowl.

Taco Pasta

Every Thursday at our home is International Night. We rotate the type of international food every week, although Italian and Mexican are our regulars. Last night I made a new dish, Taco Pasta. While I was making it my husband kept saying it looked like beefaroni but let me tell you this tastes nothing like it! This is delish!!!!! I hope you enjoy it!

Ingredients:
•1 pound box penne noodles
• 1 pound of ground beef or ground turkey
• 1 packet taco seasoning
• 1 cup water
• 1/2 package cream cheese
• 2 1/2 cups shredded cheese

•Optional: tomatoes, lettuce, beans, sour cream

Instructions:
1. Boil pasta (I cook a minute less than the recommended time) since the noodles will also cook in the oven
2. Brown the ground beef or turkey and drain
3. Mix taco seasoning and 1 cup water with the meat
4. Let simmer for a few minutes

5. Add cream cheese to the meat and stir until melted. Remove from heat
6. Place pasta in casserole dish, mix in 1 cup cheese

7. Pour the meat mixture on top of the noodles and mix
8. Top with remaining cheese
9. Bake at 350 degrees for 15-20 minutes

10. Add tomatoes, lettuce, beans, sour cream, or any other toppings. 🙂

Italian Parmesan Chicken

This dish is very tasty and actually pretty healthy! I hope you enjoy it!

Marinade Ingredients:
• 1 egg beaten
• ½ cup of milk
• 1 tablespoon lemon juice
• 1 tablespoon garlic powder

Ingredients:
• 3-4 large boneless chicken breasts cut in half
• 1 cup of Parmesan cheese
• 1 package Good Seasons Italian Dressing Zesty mix
• 1 teaspoon garlic powder

Instructions:
1. Mix all the marinade ingredients in a bowl and then pour in a Ziploc bag with the chicken. Let it marinate for a couple of hours

2. Preheat oven to 400 degrees
3.. After marinating the chicken for a couple of hours (or longer), mix the cheese, dressing mix, and garlic powder in a bowl
4. Remove the chicken from the marinade and coat with the dry mixture in the bowl
5. Place in a pan and cook for around 25 minutes

I made this with my Garlic Red Potatoes and it was delicious (my hubby even agreed)!!! Enjoy!

Texas and New Orleans Road Trip

Judd spent a month this summer in Oklahoma City for work. Once he was done, I flew out there to drive home with him (it’s a long drive home)! We decided to go a tad out of the way and take a road trip to places we’ve never been. We spent 5 days exploring Texas (Dallas, Austin, San Antonio, Houston) and Louisiana (Baton Rouge and New Orleans). We had a blast!

This is the route we took.

Our first stop was Dallas! The city was nice and the people were very friendly!

Our next stop was Austin. The city of Austin and the suburbs are GORGEOUS!!!!

We then went to Lake Travis to eat lunch at the Oasis.

If you’re ever in Austin, I highly recommend this place! The views are incredible.

Then we went to San Antonio.

We strolled along the River Walk which is beautiful.

We spent the next day in Houston. This was definitely our least favorite city. The city itself is confusing to navigate and traffic is horrendous! On top of that we got a flat tire.

I will say we were amazed by the hospitality we received while on the side of the road. Someone brought us water bottles, several people asked if we were alright, someone offered to let us sit in their a/c for a little bit (it was 100 degrees), and someone even helped me find a tire place.

The next morning we were very ready to be out of Texas! We woke up early to start our journey to Louisiana.

Our first stop was Baton Rouge and visiting LSU.

After spending a few hours in Baton Rouge we headed to New Orleans! People warned us that we probably wouldn’t like New Orleans because it was dirty and smelled. Turns out, we <3 New Orleans!

We stayed at the Crowne Plaza in the French Quarter right on Bourbon Street. If you go to New Orleans, I highly recommend this place! It isn’t cheap but it has the perfect location and it’s beautiful!

We had just checked into the hotel and were very excited to explore!

Our first stop was to check out Café Du Monde. All I have to say is yum, yum, yum!

You could walk for hours in New Orleans, there is so much to look at.

We each had a strawberry daiquiri and explored the French Quarter.

We hung out by the pool on the roof of the hotel before heading to bed.

We had a great trip but after 5 days of driving and the hot temperatures in Texas, we ready to be home! 🙂

Funfetti Cookies

Here are two random little facts about me….I LOVE food and I have the worst sweet tooth EVER! Thought I’d share one of my favorite recipes to satisfy my sweet tooth.

Ingredients:
• 1 box Funfetti cake mix
• 1/3 cup oil
• 2 eggs
• Pillsbury Fluffy Frost Vanilla Marshmallow Frosting (I mean who has time to make icing ;))
• Sprinkles

Instructions:
1. Heat oven to 375 degrees
2. Mix by hand cake mix, eggs, and oil

3. Add some extra sprinkles and stir
4. Shape dough into 2-inch balls
5. Place 2 inches apart on an ungreased cookie sheet

6. Bake 8-10 minutes or until edges are golden brown
7. Let cool for one minute and then place on cooling rack

8. Once cookies are cooled you can decorate with icing and more sprinkles
