Creamy Mac & Cheese

If I could only have one food for the rest of my life, I would choose mac & cheese. I LOVE it! I plan on sharing several different recipes but here is my recipe for Creamy Mac & Cheese.

Ingredients
• 2 cups uncooked elbow macaroni
• 4 tablespoons butter
• 1 cup milk
• ½ cup sour cream
• 1 (10.75 oz) can of condensed cheddar cheese soup
• 2 ½ cups shredded cheddar cheese
• ½ teaspoon salt
• ½ teaspoon dry mustard
• ½ teaspoon black pepper
• Crockpot

Instructions

1. Boil the macaroni in water for six minutes and drain
2. In a medium pan, mix butter and shredded cheese
3. Heat over medium and stir until the cheese melts
4. Spray your crockpot or use a crockpot liner
5. Add cheese mixture, sour cream, cheese soup, milk, mustard, and pepper into the slow cooker and mix.
6. Add the drained macaroni and stir again
7. Cook on low for 2 hours and stir occasionally
8. Enjoy!

Angel Chicken & Pasta

I don’t have another word for this pasta dish but… AMAZING!!!! This reminded me so much of my favorite dish we ate in Venice.

Ingredients

3-4 chicken breasts (about 1 pound)
1 package of white mushrooms (around 8 ounces)
¼ cup butter
1 (10.75 ounce) can condensed golden mushroom soup
1 (0.7 ounce) envelope of Italian dry salad dressing mix
½ of an 8 ounce tub of chives and onion cream cheese
½ box of angel hair pasta (you can also serve this over rice instead of pasta)

Instructions

1.Brown the chicken (should be cut in small pieces) in a skillet with vegetable oil
2. In a large pot start boiling water for the angel hair pasta
3. Once the chicken is almost cooked, add the clean mushrooms
4. In a medium sauce pan, melt butter and stir in the Italian dressing mix
5. Add mushroom soup and cream cheese
6. Stir until cream cheese is melted
7. Cook angel hair pasta for the time listed on the box
8. Add the chicken and mushrooms to the sauce
9. Serve the chicken and sauce mixture over the pasta
10. Enjoy!!!

Gooey Funfetti Bars

Craving something sweet and gooey?  You’ve got to try these Gooey Funfetti Bars!

Ingredients:

1
• 1 egg
• ¼ cup oil
• 1 ½ cups white cake mix
• 4 tablespoons sprinkles
• 7 ounces marshmallow cream
• 1 ½ tablespoons butter
• 3 cups mini marshmallows
• 3 cups Fruit Pebbles or another rice cereal

Instructions:
1. Preheat oven to 350 degrees
2. In a mixing bowl, mix cake mix, egg, oil, and sprinkles
3. Press into a greased pan (I used a 9×9 pan)

4. Bake at 350 degrees for 10 minutes
5. Remove cake layer from oven
6. Put spoonfuls of marshmallow cream on top. Allow the cream to spread out on its own.
7. Microwave 1 ½ tablespoons of butter for 25 seconds (or until melted) in a large bowl
8. Add 3 cups of mini marshmallow.  Stir until marshmallow are well coated
9. Microwave marshmallow mix for 50 seconds
10. Stir until smooth. You might need to heat it up for longer if it is not getting smooth!
11. Stir in 3 cups of cereal

12. Carefully spread the marshmallow cream evenly across the pan
13. Pour the cereal/marshmallow mixture on top of the marshmallow cream and spread out evenly

14. Let the bars cool before serving
15. Enjoy!

Tip: If you are making these for a holiday party, you can use holiday festive colors! For example, buy red and green rice cereal and sprinkles!

Halloween Themed Dinner

I decided to make a fun themed Halloween dinner because this is Judd’s favorite holiday!

Here was the menu (see below for the recipes):
• Starter-Witches Broomsticks
• Entree- Cheesy Mummy Dogs
• Dessert- Dirt and Worms
• Drink- Blood Bath Punch (just red fruit juice)

Ingredients:
• String cheese or Colby cheese sticks
• Pretzel sticks
• 1 Package fresh chives

Instructions:

1. Unwrap cheese sticks
2. Cut cheese sticks in half
3. Cut the bottoms of cheese sticks to resemble broom sticks (Note: Colby cheese is a lot harder to cut)
4. Insert a pretzel into the top of each cheese stick (broom handle) carefully. Don’t push it in too deep or the cheese will break.
5. Wrap each cheese stick at the top to form a knot around the cheese
6. Enjoy!

• 1 can Crescent Roll Dough
• 4 American Cheese slices
• 8 Hot Dogs
• 16 Candy Eyes

Instructions:

1. Preheat oven to 375 degrees
2. Cut each cheese slice into 2 strips
3. Unroll dough and separate into 4 rectangles (there will be a line in the middle from the Crescent Role cut)
4. Cut each rectangle into 1/2″ strips and join 2 together to form one long bandage.
5. Take each cheese slice and fold in half (1/2 piece in each dog)
6. Wrap bandage around each hot dog and 1/2 slice of cheese (fold cheese so its doubled up)
7. Make sure to leave a gap for face
8. Place wrapped hot dogs (cheese side down) on a lightly greased cookie sheet
9. Bake 15 minutes or until dough is lightly brown
10. Place a small piece of cheese where eyes go and place in oven to melt for a minute
11. Place 2 eyes on each mummy

Ingredients:

1
• 2 cups cold milk
• 1 package (4 ounces) chocolate instant pudding
• 1 (8 ounces) container whipped topping
• 1 package Oreos (crushed into crumbs)
• 1 bag gummy worms

Instructions:
1. Pour the milk into a mixing bowl and add the pudding mix
2. Beat with a whisk until well blended (about 2 minutes)
3. Let pudding stand for five minutes
4. Stir whipped topping into the pudding until it is all the same color
5. Place a layer of crushed cookies into the bottom of the bowl
6. Then add a layer of pudding
7. Then repeat another layer of cookies, then pudding, and then cookies
8. Finish up by adding gummy worms cut in half to the top
9. Put bowl into the refrigerator for about one hour
Note: you can also put these in individual cups instead of one big bowl. It might even look nicer! 🙂

Trifecta Brownies

This might be my new go-to dessert to take to a party or to a family get together! This is delicious!  BUT if you’re counting calories, stay far away from this! 😉

Trifecta Brownies

Ingredients:
• 1 package Double Stuf Oreos
• 1 tub or tube of chocolate chip cookie dough (around 30 ounces)
• 1 package brownie mix (any brand is fine)

Instructions:
1. Preheat oven to 350 degrees
2. Spread a piece of parchment paper in a 9×13 pan. I highly recommend this (lesson I learned the hard way!)
3. Spread cookie dough in the bottom of pan

4. Place a layer of Oreo cookies on top of the cookie dough

5. Prepare brownie batter as indicated on the box (but don’t bake)
6. Evenly pour brownie batter over the Oreos and cookie dough

7. Cover with foil
8. Bake at 350 degrees for 30 minutes
9. Uncover and bake for an additional 15-25 minutes.
Note: Brownies may still be gooey in the middle when its warm but they will set perfectly once cooled!

10. Let cool completely before cutting
11. Enjoy a piece by itself or with a scoop of vanilla ice-cream!

Chicken Fajitas and Taco Dip

Judd and I are obsessed with both of these recipes! I hope you enjoy these as much as we do!

Chicken Fajitas

Chicken Fajitas
Ingredients:
1 pound chicken breasts
1 packet Ortega Taco Seasoning
3/4 – 1 cup of water
Flour tortillas
Shredded cheese
Chopped lettuce
Optional: tomatoes, sour cream, green peppers, onions

Instructions:
1. Preheat oven to 350 degrees
2. Cut the chicken into bite sized pieces
3. Fry the chicken and drain juice
4. Add seasoning and water

5. Let simmer for a few minutes
6. Cover cookie sheet with foil and lay tortillas across foil
7. Put a scoop of chicken in each tortilla
8. Top with cheese

9. Fold tortillas and hold together with a toothpick

10. Cover with foil
11. Bake for 10 minutes at 350 degrees

Taco Dip

Taco Dip

This dip is addicting and quite possibly the easiest recipe ever!

Ingredients:
1 packet taco seasoning (any brand is fine)
16 ounces sour cream
1 bag tortilla chips

Instructions:

1. Mix seasoning into sour cream
2. Dip tortilla chips into dip and enjoy!
