World’s Best Chocolate Chip Cookies and Chocolate Marshmallow Bars

I’m sharing two dessert recipes today! I’m currently pumping for two babies which means I’m hungry 24/7! We’ve had a lot of desserts and snacks in our home lately.

World’s Best Chocolate Chip Cookies

My husband decided a while back that he wanted to figure out how to make the best chocolate chip cookies and after a lot of trial and error, he nailed it!  They are big, gooey, chocolatey, and pure perfection!

Ingredients

  • 2 cups semisweet chocolate chips
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg yolk
  • 1 egg

Instructions

  1. Preheat the oven to 325 degrees
  2. Grease cookie sheet
  3. Mix the flour, baking soda and salt (sit this sifted ingredients aside)
  4. In a medium bowl, mix the melted butter, brown sugar and white sugar
  5. Beat in the vanilla, egg, and egg yolk until creamy
  6. Mix in the sifted ingredients until just blended
  7. Stir in the chocolate chips by hand using a wooden spoon
  8. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets
  9. Bake for 15 to 17 minutes
  10. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely

Chocolate Marshmallow Bars

These are in between brownies and cake so I decided to call them “bars”.  I hope you enjoy them as much as we did!  Just a tip, heat a piece up in the microwave for 15 seconds, SO good!

Ingredients

For the Brownie:

  • 1 cup margarine (2 sticks)
  • 2 cups sugar
  • 4 eggs
  • 1 bag of mini marshmallows (10 ounces)
  • 1/3 cup cocoa
  • 2 teaspoons vanilla
  • 1 1/2 cup flour

For the Frosting:

  • 1 stick m butter (1/2 cup), softened
  • 3 cups of powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 3 tablespoons of cocoa

Instructions

  1. Preheat oven to 325 degrees

For the Brownies:

  1. Soften margarine and blend in sugar and cocoa
  2. Add eggs, vanilla, and flour
  3. Grease a 9”x13” baking pan and bake for 25-30 minutes
  4. Remove from oven and cover entire top with marshmallows
  5. Return to oven for 4 minutes

For the Frosting:

  1. Mix all ingredients with a hand mixer until smooth
  2. Spread over brownies

Jamaica

Earlier this summer, I surprised my husband for his 30th birthday with a short trip to Jamaica!  We had the best time and it was so nice to relax for a few days.  Special thanks to my parents for watching our infant twins and 2 furbabies while we were gone!

We stayed at the Grand Palladium Jamaica Resort and Spa in Montego Bay. This was our 5th all-inclusive and it was one of our favorites! I HIGHLY recommend this resort.  The resort is the biggest in Jamaica and the main pool is to die for.  There are 7 restaurants and 3 buffets, tons and tons of bars, several pools and different beaches, and endless outdoor activities to choose from.

Guest Infertility Blogger: Meet Erin

IMG_6068Infertility has been a huge part of my life for years and even though I have my miracle babies, it will always be a part of me.  I realized after going through infertility that many people aren’t aware of how common this is. Twice a month, I’m going to have a guest blogger who went through infertility or is currently going through it.  Meet, our first Guest Blogger: Erin from Our Journey to Three

Tell us a little bit about you and your infertility journey:

Matt & I have been trying to start a family since we got married in October 2012. After being diagnosed with PCOS and only having one fallopian tube, we began fertility treatments in November 2014. We have gone through nine IVF transfers – transferring a total of fifteen embryos. Six of these transfers resulted in pregnancy, but sadly, all six ended in miscarriage. Most of my losses were around 6 to 6 ½ weeks, but the furthest we made it was about 8 weeks. After seeing countless doctors and trying different protocols, we have made the decision to move forward in our journey by using a gestational carrier, with the hopes of building our family.

What led you to the decision of the route you are pursuing or pursued?

After struggling with infertility for five years, my body has just been put through hell. The injections, doctors’ visits, ultrasounds, egg retrievals, and D&Cs have all put a toll on my body. Emotionally, I can’t handle much more either. Also, with repeated pregnancy loss I’ve just come to the realization that my body isn’t meant to carry a child, unfortunately. We have a close friend that will carry for us – hopefully in the fall/winter.

Who offered you support during this process that really stood out to you? What did they do?

There’s no way that I could pick just one person, because the support we have received has been unreal. My husband has been my number 1 support system, along with my mom. Also, a lot of family, friends, and TTC sisters have given us support during this journey. Some of the things that they have shown support to us is sending flowers/cards/small gifts during difficult times; asking us how we are doing; texting us or messaging us; and praying for us – that’s helped up stay afloat quite a bit. Without our support system, I fully believe I would have given up by now.

Did you ever deal with unsupportive people during your journey? How did you handle this?

Yes, 100% – and we still do. Unfortunately, it is even family members. It has been hard to cope with, but I’ve come to the realization that it is what it is. I just know that those aren’t my people. The things I’ve heard from people during this journey just erks me to no end. But I can’t expect them to understand it, they’ve never lived it. The supportive ones FAR outweigh the unsupportive ones so I try to just brush it off.

Are you going to share your infertility journey with your children?

Absolutely. Infertility has been such a HUGE part of my life that has changed me in good ways, that I want them to know how hard we fought for them. And that they were worth every single injection, tear, and pain that we had to go through to get them here.

What would you like couples or women who don’t struggle with infertility to know about infertility?

I would want them to know how extremely fortunate and blessed they are to not have to struggle with infertility. I cannot even imagine having intercourse and getting pregnant – it honestly blows my mind that it works so easy for the majority of people. If you know someone struggling with infertility, I urge you to acknowledge it. I also want them to know that I in no way “blame” them for being fertile – it isn’t their fault! I just hope they know how lucky they are.

What is/was the hardest part of this journey for you?

I would have to say, going through three failed Clomid cycles, three failed IUIs, nine IVF transfers, six miscarriages and still no baby. I hate to say it, but it’s almost as if we did it all for nothing. If someone would have told me years ago, we needed a surrogate, it’s the route we would have taken immediately.

What is the most valuable piece of advice you’d like to share with our readers?

Infertility is no walk in the park. If you’re struggling with infertility, just know it isn’t going to be easy, but I promise you, you have the strength within you to keep pushing forward until you get your end result. Couples that struggle with infertility are such warriors – they’re giving themselves countless injections, are put on emotional rollercoasters, and all keep living their everyday life.

My Famous Mac and Cheese

Out of all the recipes I make, this is my husband’s favorite and definitely one of mine too!  This is the one dish that I always bring to family gatherings.

Ingredients

  • 1 box elbow macaroni
  • ½ cup butter
  • ½ cup milk
  • ½ cup sour cream
  • 3 cups shredded cheddar cheese
  • Optional: handful of mozzarella

Instructions:

  1. Cook noodles al dente
  2. Drain noodles
  3. Mix noodles, butter, milk, sour cream, and 2 cups shredded cheddar cheese
  4. Pour into a 9×13 greased baking pan
  5. Add 1 cup of cheddar cheese on top
  6. Bake at 400 degrees for 20 minutes or bake at 450 degrees for 10 minutes

Top 10 Must Haves for Babies 0-3 Months

IMG_5735I decided to share my top 10 baby items for the first 0-3 months (better late than never)! I plan to share this every 3 months as my babies go through different stages.  I’m not going to include the typical stuff that everyone knows you need: bottles, blankets, diapers, car seat, etc. Please note, this post is not sponsored! If you click the name of each product, it will take you to the product online.

  1. Rock n Play– This is a godsend!! It can put my babies to sleep almost immediately!
  2. Boppy Newborn Lounger– This makes life so much easier! You can put the boppies on the couch, on the floor, just about anywhere. The babies love them! I will be sad when they outgrow them.
  3. Swaddles– My twins LOVE being swaddled! As soon as we swaddle them they start to close their eyes and they know it’s time for bed!
  4. Blooming Bath– At first we tried these little baby bath seats for the bath tub but after having a C-Section it was too hard for me to lean over the tub so we got the Blooming Bath that you put in the sink and it makes bath time super easy!
  5. Pump– I wrote another post about pumping. If you’re going to be breastfeeding or exclusively pumping then I highly recommend a strong pump! I love mine!
  6. Sarah Wells Pumping Bag– I LOVE my Sarah Wells bag! You can hear more about it here.
  7. Ju-Ju-Be BFF diaper bag in Duchess– I love all the compartments in this bag and how much it holds!! I also love that you can wear it on your shoulder or as a book bag! It also has a pocket for the mom’s personal stuff like a cell phone and wallet. It’s perfection!
  8. Monitor with two parent monitors– I highly recommend two parent monitors in case you ever sleep separately (we are horrible sleepers so we do this often) or if you will be in separate rooms of the house!  In the future, we plan to get video monitors but we didn’t feel they were needed at this age. We bought the Vtech 221-2 Digital Audio Monitor with 2 parent units and love it!
  9. Car seat covers– these can be used to cover the carseats in the car or in the stroller!  When the twins were tiny, I didn’t want people touching them when they were out in public so these covers made this happen! These also can be used to nurse and in the future covers in public highchairs and shopping carts! Some people also use these as an infinity scarf.
  10. White sleep shirts (not onesies)- I put the twins in these under their swaddles because it makes changing their diapers in the middle of the night super easy!

I hope this helps someone with their baby registry! I know how overwhelming it can be!

Roasted Garlic Green Beans

It’s been a while since I’ve shared a recipe but I’ve been in the mood to cook a lot lately!  We decided that our family needs to eat a little healthier, so I’ve been trying different recipes (some healthy, some not so healthy).  Are you looking for a green bean dish that is tasty? If so, you have to try this!  My husband even ate all of the green beans on his plate, this never happens! 😉

Ingredients:

  • 1 pound frozen green beans
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • Pepper to taste

Instructions:

  1. Preheat oven to 425 degrees
  2. Line a baking sheet with aluminum foil
  3. In a bowl, combine all the ingredients and toss
  4. Roast for 15 minutes, stir
  5. Roast for another 15 minutes
  6. Enjoy!
