Breakfast in a Biscuit

I think it’s fair to say the recipe below has changed my life, my life in the mornings that is!

This recipe is now my go-to breakfast! What’s nice about these is you can make them ahead of time, freeze them, and pop them in the microwave. In the morning, you put one on a plate and zap it in the microwave for about a minute. So easy!!! You can also vary the ingredients to keep things interesting!

Breakfast in a biscuit

Ingredients
• 6 eggs
• 12 sausage patties (I use Jennie-O Turkey Sausage Patties)
• 2 cans large biscuits (8 count, you will have some left over)
• 6 pieces of cheese

Instructions
1. Preheat oven to 375 degrees
2. Cook the sausage in a large skillet and drain any grease
3. Scramble the eggs
4. Flatten out each biscuit on a lightly greased baking sheet
5. Put a sausage patty, followed by a little egg, then a half of piece of cheese in the middle of each biscuit
6. Fold over the biscuit on each side until it is almost closed and pinch the dough together
7. With the remaining biscuits, you can tear those into small pieces to cover up any holes in top of the biscuits
8. Bake for 13-15 minutes

Freezer Instructions
1. Once the biscuits are done cooling, wrap each biscuit in aluminum foil

2. Put all the wrapped biscuits in a gallon size freezer bag and label the bag with the date
3. In the morning, remove the biscuit from the foil and heat in the microwave for 1-2 minutes 🙂

Vanilla Sugar Cookies

Oh my, these are delicious!!! We ate all 2 dozen in 24 hours. 😉

Ingredients
1 box white cake mix
1 box (3.5 ounces) vanilla instant pudding
2 eggs
2 tablespoons softened butter
2 tablespoons milk
Sugar sprinkles

Instructions
1. Preheat oven to 350 degrees
2. In a large bowl, mix the cake mix, dry vanilla pudding, butter, milk, and eggs
3. Stir. Warning: this will be very thick and hard to stir!
4. Scoop the dough into small balls (about a tablespoon thick) onto a greased cookie sheet. Place the cookies about 2 inches apart
5. Either roll the cookies in the sugar sprinkles or coat the top of the cookies (this one is easier)
6. Bake for 9-11 minutes
7. Cool for a minute on the baking sheet and then move cookies to a rack to cool
8. Enjoy!

Note: This makes 2 dozen cookies!

Baked Layered Spaghetti

I’m always looking for new Italian recipes because the Steele’s love anything Italian! I found this original recipe at AllRecipes.com but I made a few tweaks.

Ingredients
1 box (16 ounce) spaghetti
1 pound ground turkey or beef
1 (26 ounce) jar of spaghetti sauce
2 eggs
½ teaspoon salt
½ teaspoon onion powder
1/3 cup shredded Parmesan cheese
4 cups shredded mozzarella cheese
2 cups small curd cottage cheese

Directions
1. Cook the spaghetti according to package directions
2. At the same time, brown the ground turkey/beef until it’s no longer pink
3. Stir in the spaghetti sauce, salt, and onion powder into the meat. Set aside
4. Whisk the eggs, Parmesan cheese, and butter in a large bowl together
5. Drain the spaghetti once it’s done
6. Combine the spaghetti and egg mixture, toss to coat
7. Place half the spaghetti mixture into a greased 13×9 baking dish
8. Top with half of the cottage cheese, followed by half of the meat sauce, and half of the mozzarella cheese
9. Repeat steps 7 & 8
10. Cover with foil and bake at 350 degrees for 40 minutes
11. Uncover and bake 20-25 minutes longer or until cheese is melted

Cheesey Chicken & Rice Casserole

Another simple and delicious chicken dish! I hope you like it!

Ingredients
• 1 1/3 cup water
• 1 can cream of chicken soup
• 1 cup INSTANT rice (if you don’t use instant rice then you need to cook the rice before putting it into the baking dish)
• 1 packet Italian seasoning
• 1 pound chicken breast
• 1 cup cheese

Instructions
1. Cut up the chicken into bite-size pieces
2. Cook the chicken with a small amount of Italian seasoning
3. Mix the water, cream of chicken soup, rice, the remaining of the Italian seasoning, and half the cheese in an 8×8 baking dish
4. Stir in chicken
5. Mix well
6. Add the remaining cheese on top
7. Bake at 350 degrees for 30 minutes
8. Enjoy!

Note: If you let this cool for a few minutes, it will thicken up!

Pumpkin Chocolate Chip Muffins and Cookies!

I decided we needed something festive to eat for breakfast on Thanksgiving. These did not disappoint and are so easy to make.

Ingredients
1 box Spice Cake Mix
1 cup chocolate chips
1 (15 oz) can pumpkin

Instructions

1. Preheat oven to 400 degrees
2. Line a muffin pan (12) with muffin liners
3. In a mixing bowl, combine cake mix and canned pumpkin
4. Mix with an electric mixer until batter is smooth
5. Stir in the chocolate chips
6. Fill the muffin liners 2/3 of the way full (tip: you can smooth these out with a wet spoon)
7. Bake for 15 minutes
8. Let cool for a few minutes before removing

You can also make these into cookies! The same ingredients and instructions but bake at 350 degrees for 15 minutes!

Brown Sugar Garlic Chicken and Asparagus

Brown Sugar Garlic Chicken

Ingredients
4 boneless chicken breasts
2 tablespoons olive oil
4 tablespoons brown sugar
3 tablespoons garlic powder

Directions
1. Preheat oven to 450 degrees
2. Line a baking dish with aluminum foil and lightly coat with cooking spray
3. In a gallon size bag mix brown sugar and garlic powder
4. Sprinkle olive oil on the chicken breasts
5. Place each chicken breast in the gallon size bag and shake till chicken is lightly covered with seasoning
6. Place chicken breasts into baking dish
7. Sprinkle any remaining mixture on top of chicken
8. Bake uncovered for 20-30 minutes

Asparagus

Asparagus can be really tasty or really boring. This is my favorite recipe to make it very tasty!

Ingredients
1 bunch asparagus (I prefer skinny asparagus)
3 tablespoon butter
2 tablespoons garlic powder
Salt
Handful of shredded Parmesan cheese

Instructions
1. In a large skillet, heat butter until melted
2. Add garlic seasoning and stir till its mixed
3. Add asparagus
4. With a spatula, flip the asparagus until each piece is coated with butter/garlic
5. Sprinkle salt
6. Cover and cook for 10 minutes or until it is tender. Flip a few times throughout the 10 minutes
7. Sprinkle asparagus with Parmesan cheese
8. Enjoy!
