I think it’s fair to say the recipe below has changed my life, my life in the mornings that is!
This recipe is now my go-to breakfast! What’s nice about these is you can make them ahead of time, freeze them, and pop them in the microwave. In the morning, you put one on a plate and zap it in the microwave for about a minute. So easy!!! You can also vary the ingredients to keep things interesting!
Ingredients
• 6 eggs
• 12 sausage patties (I use Jennie-O Turkey Sausage Patties)
• 2 cans large biscuits (8 count, you will have some left over)
• 6 pieces of cheese
Instructions
1. Preheat oven to 375 degrees
2. Cook the sausage in a large skillet and drain any grease
3. Scramble the eggs
4. Flatten out each biscuit on a lightly greased baking sheet
5. Put a sausage patty, followed by a little egg, then a half of piece of cheese in the middle of each biscuit
6. Fold over the biscuit on each side until it is almost closed and pinch the dough together
7. With the remaining biscuits, you can tear those into small pieces to cover up any holes in top of the biscuits
8. Bake for 13-15 minutes
Freezer Instructions
1. Once the biscuits are done cooling, wrap each biscuit in aluminum foil
2. Put all the wrapped biscuits in a gallon size freezer bag and label the bag with the date
3. In the morning, remove the biscuit from the foil and heat in the microwave for 1-2 minutes 🙂
