Chocolate Peanut Butter Bundt Cake

You have to try this, this is SOOO good! I have a hard time deciding if this is my new favorite cake or if my Mississippi Mud Bundt Cake  is.  My husband said this is favorite though! Both are amazing!

Ingredients

Cake

  • 1 box of chocolate cake mix
  • 2 small instant chocolate puddings
  • 1/2 cup vegetable oil
  • 1 and ¼ cup water
  • 4 eggs
  • 1 cup Reese’s peanut butter chips

Icing

  • 2/3 cup butter, softened
  • 6 cups powdered sugar
  • 3-4 tablespoons milk
  • 1 tsp vanilla
  • 1 cup creamy peanut butter
  • Chocolate chips for garnish

Directions

  1. Preheat oven to 350 degrees
  2. Combine cake mix, pudding mix, oil, water, and eggs in a mixing bowl with an electric mixer
  3. Stir in one cup of peanut butter chips, and then pour into greased bundt cake pan
  4. Bake 40 minutes or until the toothpick comes out clean
  5. Let the cake sit on the counter in the pan for 10 minutes
  6. Then the scary part. Flip the cake onto serving plate to finish cooling.  I just did this really fast and had no problems
  7. To make the frosting, mix butter, powdered sugar, vanilla, and peanut butter and milk with electric mixer until blended
  8. Frost cooled cake and garnish with chocolate chips
  9. Enjoy

Homemade Meatballs

 

Copy of Chicken tortilla soup-2If you’ve been following me for a while, you know that I have a sweet tooth and I love Italian food!  That being said, I’ve always been nervous to make meatballs because it looked complicated and time consuming! After a lot of research and reading different recipes, I came up with the perfect, delicious, and easy recipe!  We all loved the meatballs even my toddlers!!IMG_1341IMG_1343

Ingredients
  • 1 lb 80/20 ground beef
  • 1 egg
  • 1/2 cup Parmesan cheese
  • 1/3 cup Italian breadcrumbs
  • 1 tablespoon dried garlic
  • 1 tablespoon dried basil
  • 2 tablespoons dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Jar of your favorite spaghetti sauce
  • 1 Box Spaghetti
Instructions
  1. In a bowl, combine egg, cheese, breadcrumbs, garlic, basil, parsley, salt, and pepper.
  2. Add the beef and blend with your hands.
  3. Form small balls and place on a cookie sheet.
  4. Bake at 400 degrees for around 15 minutes (depends on size of the meatballs).
  5. Place meatballs in the sauce and simmer for 30 minutes.
  6. Cook the spaghetti according to the box.
  7. Add the meatballs and sauce on top of the spaghetti.
  8. Enjoy!!

Sheet Pan Lemon Garlic Salmon

We eat salmon once a week and here is why!  I try to find different ways to cook it but this recipe below and my Parmesan Crusted Salmon are my two favorites (so far).

 Ingredients

  • 4 (6 oz) salmon fillets (I prefer skinless but if you can’t find it, just take the skin off after you’re done cooking)
  • 1 pound red potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 3 tablespoons garlic
  • 2 tablespoons parsley
  • 1/3 cup lemon juice
  • 1/2 cup melted butter
  • 2 bunches asparagus (I forgot to buy this so I used 1 can of green beans) 

Instructions

  1. Preheat oven to 400°F
  2. Cut potatoes to bite size pieces
  3. In a bowl, toss together potatoes with the olive oil, 1 tablespoon of garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper
  4. Spread out in an even layer on a large rimmed baking sheet
  5. Cook for 15 minutes
  6. Push potatoes to two sides of the sheet pan and arrange salmon down the center
  7. Rub salmon evenly with 2 tablespoons of the garlic and 2 tablespoons of parsley
  8. Add the asparagus between the salmon and potatoes
  9. Combine 1/4 cup of lemon juice and 1/4 cup of the melted butter together and pour the mixture over the salmon and asparagus
  10. Return to oven and continue baking for 15 minutes
  11. Add salt and pepper to taste
  12. Enjoy!!

Chocolate Truffle Cookies

These aren’t just good, they are INCREDIBLE.

Ingredients:

  • 1 cup butter, softened
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cup cocoa powder
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup granulated sugar (for rolling)

Instructions:

  1. Preheat oven to 350 degrees
  2. Mix together butter and brown sugar with a mixer until fluffy (about 5 minutes)
  3. Add in eggs, one at a time, mixing after each egg
  4. Add vanilla
  5. Mix cocoa powder, flour, baking soda and salt
  6. Slowly add flour mixture to butter mixture and mix well
  7. Refrigerate dough for 1 hour
  8. Using a cookie scoop, scoop dough and place into granulated sugar, roll around to coat
  9. Place sugar coated dough on lightly greased or parchment lined baking sheet, space cookies 2 inches apart
  10. Bake at 350 degrees for 9-10 minutes
  11. Let cookies cool on baking sheet for 10 minutes before removing to racks to cool
  12. Enjoy!

Baked Ziti

fullsizeoutput_826This is one of my mom’s go to recipes and now one of mine too! It’s easy and delicious!

Ingredients:

  • 1 box ziti/penne noodles
  • 1 jar spaghetti sauce- I use Prego Fresh Mushroom
  • 1 package pepperoni
  • 1 pound hot sausage- I use Bob Evans Zesty Hot Pork Sausage (I promise this dish is not spicy, I can’t handle spicy. It has a tiny kick with the after taste.)
  • 2-3 cups mozzarella cheese

Instructions:

  1. Preheat oven to 350 degrees
  2. Cook noodles according to box and drain
  3. Cook sausage in skillet
  4. In a large bowl mix together noodles, spaghetti sauce, pepperoni (I recommend separating these first or else they will stick together), and sausage
  5. Pour into a greased 9×13 pan
  6. Top with mozzarella cheese
  7. Bake for 30 minutes at 350 degrees
  8. Enjoy!

Crock-Pot Chicken Taquitos

I have been really slacking at posting new recipes lately,  life has been busy!  This one I had to share because it is SO good and SO easy!  Aren’t those the best kind of recipes?

Ingredients:

  • 2 uncooked chicken breasts
  • 8 taco-sized flour tortillas
  • 1 packet taco seasoning
  • 6 ounces cream cheese, cubes
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar cheese

Directions:

  1. Place chicken breasts in the Crock-Pot
  2. Sprinkle with taco seasoning, add cream cheese cubes, and water
  3. Cover and cook for 6-8 hours on low, or for 4-6 hours on high
  4. Preheat oven to 400 F
  5. Turn off or unplug the Crock-Pot
  6. With two forks, shred the chicken in the Crock-Pot
  7. Add cheddar cheese, and stir to evenly coat the chicken
  8. Spoon shredded chicken into the center of the flour tortillas. Roll tightly and place on a parchment-lined baking sheet
  9. Drizzle olive oil on top of tortillas
  10. Cook in preheated oven for 8-12 minutes, or until tortillas are crisp
