Crock Pot Italian Chicken and Potatoes

The Crock Pot has been my best friend lately!  Life has been super busy so I’ve been putting everything in the Crock Pot in the morning and its ready by dinner time!

Here is a new recipe I tried this week, Italian Chicken and Potatoes!  We really enjoyed it but if you don’t like Italian dressing, I’d stay clear of this recipe! The dressing is fairly strong.

Ingredients:

  • 4 chicken breasts
  • 16 oz bottle of Italian Dressing
  • 8 red potatoes (I cut these in half)
  • 1/2-1 bag of mini carrots (depends on how much you like carrots)
  • 1 cup of water
  • Optional: 1/2 cup of Parmesan cheese and 1/2 onion

Instructions:

1. Place the thawed chicken on the bottom of the CrockPot

2. Cover the chicken with the Italian dressing and water

3. Add potatoes, carrots, onion, and cheese

4. Cook on low for 5-7 hours. (Or high 3-4 hours)

5. Enjoy!

Thanksgiving Chicken

I could not decide what to call this dish but my husband came up with the perfect name, Thanksgiving Chicken (because it uses stuffing that we normally only eat on Thanksgiving).  My family cannot get enough of it!

Ingredients:

-4 Chicken Breasts (I used tenderloins this time because I bought the wrong thing)
-6 Slices Pepper Jack Cheese (it is not spicy at all, I promise!)
-1 Can Cream of Chicken Soup
– ¼ cup milk
-Stove Top Chicken Stuffing (about ¾ box)
-¼ cup butter

Instructions:
1. Cover bottom of pan with chicken

2. Lay cheese on top of chicken

3. Mix 1 can cream of chicken soup and ¼ cup milk
4. Pour over chicken

5. Top with 3/4 bag (or more) of Chicken Stuffing.
6. Drizzle 1/4 cup butter on top

7. Bake at 350 for 45-60 minutes

This was plenty of food for us but this dish over rice would be delicious too!

Dorito Taco Bake

This was originally posted in January 2015.  This got deleted so I’m reposting it. 🙂

Tonight is the National Championship so I’m sharing a yummy recipe that is perfect to eat while watching football (or while my hubby watches football)!

Most of my recipes I get from the internet or my mom and then I change the ingredients/directions to meet our taste buds. This is one of our favorites…Dorito Taco Bake

Ingredients:
1lb ground turkey (can use beef instead)
1 package taco seasoning
1 package crescent rolls (don’t buy jumbo) OR 1 bag of tostada shells to layer bottom of pan
1 (8oz) can tomato sauce
2-3 cups shredded cheddar cheese
1 bag of Nacho Cheese Doritos

Optional: diced tomatoes, sour cream, lettuce

Directions:
1. Brown ground turkey and drain

This little gadget (meat masher) my mom got me is amazing!

2. Add taco seasoning, tomato sauce, and a tiny bit of water

3. Simmer
4. Spray a lot of Pam on the pan (if using crescent rolls). I use a 9×13 pan for this.
5. Press out the crescent rolls in a pan to make the crust.  OR if using tostada shells, layer at the bottom of pan

6. Layer the turkey and then cheese on top of the crust

7. Crush 3/4 bag Doritos and put on top (might want to use less, we love Doritos)

8. Bake at 350 degrees for 30 minutes
9. Enjoy!

And… GO BUCKS!!!

Lemon Garlic Salmon and Roasted Potatoes/Carrots

My goal is to make salmon once a week!  Not only do I love the taste, it’s so good for you! My husband likes it but doesn’t love it so, I’m always looking for new recipes so that he doesn’t get bored. This is one of the easiest ones that I make and I normally have everything on hand.  I hope you enjoy it!

Ingredients:

  • 2 pounds salmon
  • 2 tablespoons garlic powder
  • Lemon slices
  • ¼ cup lemon juice
  • 1/3 cup butter 
  • 1 teaspoon brown sugar
  • 1 tablespoons chopped parsley
  • Salt
  • Pepper

Instructions:

  1. Preheat oven to 375°F 
  2. Line a baking sheet with a large piece of foil, large enough to fold over and seal to create a packet 
  3. Melt the butter
  4. Stir in garlic powder, lemon juice, and brown sugar 
  5. Place the salmon onto lined baking sheet and season with salt and pepper
  6. Pour the lemon butter over the salmon and spread evenly over the salmon. 
  7. Sprinkle with parsley
  8. Cut the lemon and arrange slices over the salmon
  9. Fold the sides of the foil over the salmon to cover and seal the packet closed
  10. Bake for 13-15 minutes or until cooked through 
  11. Open the foil (BE CAREFUL because steam will be released)
  12. Put back in the oven and broil for 2-3 minutes with the packet open
  13. Enjoy

I made Roasted Carrots and Potatoes to go with this.  The recipe is super easy:

  1. Preheat oven to 425 degrees
  2. Clean and cut the veggies
  3. Place on a baking sheet
  4. Sprinkle with vegetable oil, salt, pepper, and garlic powder
  5. Bake for 20 minutes
  6. Take out of oven and flip vegetables
  7. Bake for an additional 5 minutes

Strawberry Kiss Cookies

Are you looking for an easy, tasty, and festive Valentine’s Day dessert?  If so, you have to try these!

Ingredients:

  • 1 strawberry cake mix
  • 8 Tablespoons butter
  • 1 egg
  • 1 teaspoon strawberry extract
  • 4 ounces cream cheese
  • 36-48 chocolate truffle kisses
  • Pink sanding sugar

Instructions:

  1. Take the wrappers off the Hershey kisses and place in the freezer
  2. Combine the cake mix (dry), melted butter, egg, and extract
  3. Mix until a soft dough forms
  4. Add the softened cream cheese and mix in with batter
  5. Refrigerate the dough for 30 minutes or more
  6. Set oven for 350 degrees
  7. Roll into 36-48 balls on the sanding sugar
  8. Bake for 8 minutes
  9. Keep the cookies on the hot tray for 2 minutes before placing onto a drying rack
  10. Place a frozen kiss (would be in the freezer 30-45 minutes) on each cookie (the cookies will still be warm)
  11. Enjoy!

Chocolate Peanut Butter Bundt Cake

You have to try this, this is SOOO good! I have a hard time deciding if this is my new favorite cake or if my Mississippi Mud Bundt Cake  is.  My husband said this is favorite though! Both are amazing!

Ingredients

Cake

  • 1 box of chocolate cake mix
  • 2 small instant chocolate puddings
  • 1/2 cup vegetable oil
  • 1 and ¼ cup water
  • 4 eggs
  • 1 cup Reese’s peanut butter chips

Icing

  • 2/3 cup butter, softened
  • 6 cups powdered sugar
  • 3-4 tablespoons milk
  • 1 tsp vanilla
  • 1 cup creamy peanut butter
  • Chocolate chips for garnish

Directions

  1. Preheat oven to 350 degrees
  2. Combine cake mix, pudding mix, oil, water, and eggs in a mixing bowl with an electric mixer
  3. Stir in one cup of peanut butter chips, and then pour into greased bundt cake pan
  4. Bake 40 minutes or until the toothpick comes out clean
  5. Let the cake sit on the counter in the pan for 10 minutes
  6. Then the scary part. Flip the cake onto serving plate to finish cooling.  I just did this really fast and had no problems
  7. To make the frosting, mix butter, powdered sugar, vanilla, and peanut butter and milk with electric mixer until blended
  8. Frost cooled cake and garnish with chocolate chips
  9. Enjoy
