Lemon Butter Garlic Salmon

If you’ve been a reader for a while, you’ve probably noticed I’ve shared a few salmon recipes on here. We eat salmon once a week because it has so many health benefits and I love the taste of it! You can find two of my favorites here and here.

This is a new one that I’ve been perfecting for the past few months and I think I finally got it right and am ready to share! 🙂

Ingredients:

  • 2 lemons, thinly sliced
  • 2 pounds salmon (can be several fillets or one large one)
  • 6 tablespoons melted butter
  • 2 tablespoons honey
  • 2 tablespoons garlic powder
  • 1 tsp thyme
  • 1 tsp oregano
  • Salt
  • Pepper
  • Parsley for garnish
  • 1 tablespoon brown sugar (optional)

Instructions:

  1. Preheat oven to 375 degrees
  2. Line a rimmed baking sheet with foil and grease with cooking spray. Leave enough foil so you can fold it around the salmon while cooking.
  3. Season both sides of the salmon with salt and pepper
  4. In a small bowl, whisk melted butter, honey, thyme, garlic, and oregano
  5. Pour mixture over salmon
  6. Place lemons on top of salmon (can also put lemons on the bottom of pan before placing salmon in it)
  7. Fold up the foil around the salmon
  8. Cook for 20-25 minutes
  9. Switch oven to broil, open pouch, and broil for 2 minutes
  10. Garnish with parsley
  11. Enjoy!
