If you’ve been a reader for a while, you’ve probably noticed I’ve shared a few salmon recipes on here. We eat salmon once a week because it has so many health benefits and I love the taste of it! You can find two of my favorites here and here.
This is a new one that I’ve been perfecting for the past few months and I think I finally got it right and am ready to share! 🙂
Ingredients:
- 2 lemons, thinly sliced
- 2 pounds salmon (can be several fillets or one large one)
- 6 tablespoons melted butter
- 2 tablespoons honey
- 2 tablespoons garlic powder
- 1 tsp thyme
- 1 tsp oregano
- Salt
- Pepper
- Parsley for garnish
- 1 tablespoon brown sugar (optional)
Instructions:
- Preheat oven to 375 degrees
- Line a rimmed baking sheet with foil and grease with cooking spray. Leave enough foil so you can fold it around the salmon while cooking.
- Season both sides of the salmon with salt and pepper
- In a small bowl, whisk melted butter, honey, thyme, garlic, and oregano
- Pour mixture over salmon
- Place lemons on top of salmon (can also put lemons on the bottom of pan before placing salmon in it)
- Fold up the foil around the salmon
- Cook for 20-25 minutes
- Switch oven to broil, open pouch, and broil for 2 minutes
- Garnish with parsley
- Enjoy!
