I make garlic red potatoes at least once a week. They are so good and so easy!
-Red Potatoes (enough for 3-4 people), I recommend the Dynamic Duo (combination of mini red and yellow potatoes) from the Little Potato Company. I get this from Sam’s Club and it lasts me a couple of months.
-2 tbsp garlic
-1-2 tbsp dried parsley
-1/4 cup olive oil
-Salt and pepper
1. Preheat oven to 400 degrees
2. Clean the potatoes and then cut in half or quarters
3. Mix red potatoes in a bowl with garlic, parsley, olive oil, salt, and pepper. Toss until well coated.
4. Good for 45 minutes- 1 hour. Flip once or twice while it’s cooking.
